Pretzel-broodjes

Hoewel ik dacht koekjes te bakken, ze stonden tenslotte in een koekjesboek, zou ik ze toch meer als broodjes betitelen. Ook al kan je ze niet echt besmeren. Eigenlijk zijn het ook geen echte pretzels, aangezien die in een sodium hydroxide-oplossing gehaald worden voor het bakken (ja dat heb ik ook moeten opzoeken hoor). Kortom het is meer een klein broodje in de vorm van een pretzel. Het is een handig 'broodje' voor onderweg: zonder beleg, zo op te knabbelen. Ik heb het recept wel wat aan gepast o.a. wat bloem betrefd. Dit is niet ongewoon bij amerikaanse boeken, maar de hoeveelheid was hier wel erg groot die erbij moest. (met excuses voor de ietwat groenige foto!)

Pretzel-broodjes (24 st)

400-450 g bloem
2 el suiker
2 tl droge gist
235 gr lauwwarm water
60 g boter of margarine, gesmolten en weer gekoeld tot kamertemperatuur
snuf zout
rasp van 1/2 citroen
1 eierdooier (om te bestrijken)
3 el rietsuiker of andere grove suiker (voor decoratie)

Verwarm de oven voor op 190ºC. Meng 4 eetlepels bloem, de suiker en de gist, voeg het water toe en meng tot een soort beslag. Laat dit 5 minuten staan.
Voeg de rest van de ingrediënten (behalve eierdooier en rietsuiker) erbij en kneed tot een glad deeg. Laat dit deeg rijzen in een ingevette en afgedekte schaal op een warme plaats, ongeveer 40 minuten.


Verdeel het deeg in 24 gelijke stukjes, rol er een lange sliert van en vorm de broodjes in een pretzel (eventueel met behulp van de foto.
Leg ze op bakpapier op de bakplaat en dek ze af met ingevet plastic. Laat nog 30 minuten narijzen. Klop de eierdooier met 2 el water en bestrijk daar de broodjes mee, strooi de grove(riet)suiker erover en bak ze ongeveer 15-20 minuten in de oven of tot ze goudbruin zijn.

Sorry for any visitors who were brave enough to take a peak at a Dutch sounding blog...and all they saw was dutch chicks! I wonder if there are people who read just English? If you do please let me know (comment or email), so I won't have this feeling that it's all just for show (because it takes up a lot of work to make a somewhat good translation).

But let's get on with it. These 'cookies', that were in the '500 cookies"-book are not really cookies in my opinion. There more like little breads that need nothing else. So ideal to take with you when you're going out for a trip or on a long car ride, for they don't crumble all over your car interior! I made some changes in the recipe, one of them being the amount of flour. Maybe the recipe works better with American flours, so if you're baking with those flours, you may not need all the amount I wrote down. Just add it gradually and you'll see when you've added enough.

Pretzel-shaped rolls (yield 24)

2 - 3 cups all-purpose flour
2 TBSP fine sugar
2 tsp dry yeast
1 cup warm water
1/2 stick butter, melted and cooled
pinch of salt
grated zest of 1/2 lemon

before baking: 1 egg yolk and 3 TBSP coarse sugar

Preheat the oven to 375ºF.
Mix 4 TBSP of flour with the fine sugar, the yeast and the warm water, let it stand. After 5 minutes combine the other ingredients and knead into a dough. Let the dough rise in a greased bowl for 40 minutes .

Divide the dough in 24 pieces and roll each piece into a long strand. Shape into a pretzel-shape and place on bakingpaper on a bakingsheet. let rise for another 30 minutes. Just before baking, mix the eggyolk with 2 TBSP of water and brush this onto the pretzels, sprinkle with the granulated sugar and bake for 15-20 minutes or untill golden brown. Let the little rolls cool on wire racks.

Hi Lien,

I read the english translation, but I would read the Dutch version too if you stopped making the English translation. These sift pretzels look great! I tried some a little while ago and they were nice. The kids liked them. If I ever make them again I'll try your recipe.
